2018 Cabernet Sauvignon

We waited until we got the perfect vintage at Split Rock Ranch to bottle our first varietal Cabernet Sauvignon, and 2018 was just that year! After the rains of 2017 drove all the salt buildup of 5 years of drought from the soil, the resulting grapes from 2018 displayed textbook chemistry and superlative flavor from start to finish! This particular Cabernet is rich with notes of cassis, raspberry, tobacco, and sage. As the wine warms on the taster's palate, more subtle hints of baking spice, graphite, and vanilla bean start to emerge. The structure on this wine can best be described as big...with lots of chewy tannins that, while fun in their youth, will soften beautifully with age and time. Without a doubt, this is a wine that is going to make you wonder why we didn't bottle a Cabernet sooner!
